As a seasoned gamer with a penchant for both high-speed racing and exquisite culinary experiences, this latest fusion of adrenaline and gastronomy at COTE Korean Steakhouse‘s Las Vegas debut has left me thoroughly enthralled! The synergy between the electrifying atmosphere of Formula 1 and the mouthwatering creations by Executive Chef David Shim is simply unparalleled.


Over the recent weekend in Las Vegas, when crowds gathered for the Formula 1 Grand Prix, COTE Korean Steakhouse collaborated with The Venetian Las Vegas to offer a sneak peek of its inaugural West Coast establishment.

Before the official summer 2025 launch, founder Simon Kim and the COTE team premiered unique offerings during a Friday evening gala on the hotel’s Sky Observation Terrace, providing a breathtaking view of the Las Vegas Strip and racetrack below.

As the evening unfolded, Kim shared his plans for expanding his restaurant to Sin City with a bustling audience. “I’m originally from Vegas,” he declared, showing off his 702 area code phone number. “Ever since I opened COTE, I felt a strong pull to return to Las Vegas. I owe so much to this city—it was here that I began my career in hospitality, and the spirit of Vegas is deeply ingrained within me.

Later on, Executive Chef David Shim presented the A5 “BlackJack” sandwich, boasting premium Wagyu from Kagoshima Prefecture, exquisite Perigord black truffle, and milk toast smeared with truffle aioli. Sondre Kasin, head of bars, introduced the Diamonds Are Forever cocktail – a mix of Absolut Elyx, green apple, verjus, and sparkling edible glitter, paying tribute to the 1971 James Bond movie.

Just as expected, the energy and thrill of F1 never disappoints! We aimed to present the finest aspects of COTE so everyone here could dine like royalty,” Shim said.

A number of well-known individuals were present to enjoy the unique attractions and feel the thunderous sound of race cars zooming around the circuit during qualifying. Among them were Reilly Opelka, Soo Joo Park, Dylan Barbour, Hannah Godwin, Jason Tartick, chef Josh Capon, Marc Lotenberg, Gabriella Gonzalez, and Tyler Bergantino.

COTE Korean Steakhouse also has locations in New York, Miami and Singapore.
