It doesn’t seem sensible to restrict gameplay to only solo or three-player modes. Since a fan-made mod has successfully introduced doubles, it seems plausible that adding this mode should be relatively easy. I can’t think of a reason why Nightreign wouldn’t introduce a doubles mode in the upcoming months.

This mode could accommodate either two players (doubles) or a full party of three. By offering this option, friends without internet access or when the servers are down can still join together and play the game. Although the audience for this feature may be smaller, I believe that providing diverse options in Elden Ring Nightreign is better than restricting player choices and promoting a particular style of play.
