L’Ermitage Beverly Hills Gets a Major Glow-up — and Two Michelin Keys — for Its 50th Birthday

As a seasoned gamer who has spent countless hours immersed in virtual worlds, I must say that my latest adventure took me to none other than L’Ermitage Beverly Hills, a real-life gem that’s just as captivating as any digital landscape I’ve traversed.


In 2025, as it prepared for its 50th anniversary, L’Ermitage Beverly Hills embarked on a significant overhaul, revamping both the interior and exterior areas, and creatively redesigning its communal spaces.

In 1975, this property was established on a residential part of Burton Way and initially functioned as an apartment building. However, it underwent a quick transformation to become an all-suite five-star hotel. The redesign started on the ground floor, which now boasts a refreshed appearance thanks to Champalimaud Design, a firm known for its work on the Raffles Hotel in Singapore and the Troutbeck resort in the Hudson Valley. The renovation of L’Ermitage’s famous rooftop pool deck is expected to continue through the winter months.

The original earthy, muted color scheme and low ceilings from the 1970s in this building were replaced with vibrant orange highlights and an open, spacious feel, while still maintaining its modern architectural style.

The fresh design sets in at reception, featuring a warm, inviting check-in desk made of marble and positioned at hip level. This area is adorned by an exquisite abstract expressionist painting by Heather Day, whose vibrant sunset hues, remarkably, align with the splashes of orange found in Costa Covo Osteria, our new eatery located on one side of the unpretentious, open-plan ground floor.

Costa Covo effortlessly transforms from bright and uncomplicated in the morning to alluring as the day turns to dusk, when the light becomes softer and shimmers against the ceiling adorned with silver leaf.

The table features “coastal Italian cuisine,” as prepared by incoming executive chef Todd Matthews. In an interview with The Hollywood Reporter, he shared, “I’ve had experience in opening restaurants before, but this hotel is already established. It has its pros and cons, and I aim to address both aspects.

Originally from Orange County and brought up in North Carolina, Matthews has a keen awareness of the nearby Italian cuisine contests, such as Funke, Dante, and the legendary Spago. “I don’t view it as competition – it’s thrilling to be part of their ranks,” expresses Matthews. “My aim is to flawlessly combine exceptional cooking techniques with superior quality ingredients.

Matthews’ menu emphasizes locally caught fish over meat, and the chef has introduced two fresh fall-flavored pasta creations: a ricotta cavatelli topped with black truffle puree, sprinkled with parmesan (he affectionately refers to it as an upscale version of macaroni and cheese); and a chestnut casoncelli, a traditional Lombardy pasta, filled with chestnuts and infused with maple syrup, brandy, and nutmeg. According to the chef, both dishes are indulgent and inviting, sure to be enjoyed by many.

Delicious treats are courtesy of pastry chef (and Food Network host) Stephanie Boswell. Matthews suggests her caramel apple spumoni as a fantastic fall treat, particularly when savored on his preferred location: Costa Covo’s elegant terrace. “I love the patio,” he says. “It’s comfortable and uncluttered, and you’re not surrounded by crowds.” He describes the linear space, which now has two fireplaces.

On the other side of the spacious lobby, you’ll find the inviting Alcova lounge, another creation by Champalimaud Design. Picture this: a dreamy mid-century living room merged with an exclusive club, where a wandering Negroni cart serves up various versions of the beloved cocktail, right at your seat!

Earlier this year, as reported by THR, the hotel brought on board celebrity skincare expert Joanna Czech to enhance their services. She now operates from one of the luxurious suites on the seventh floor. This year, L’Ermitage earned two keys in Michelin’s 2024 guide, thanks to its elegant rooms and top-notch service.

Currently, the main focus is on finishing the rooftop area, which will soon house a renovated pool, a new restaurant named Poza, and a spacious event space. Lindsey Craig, the hotel’s marketing and communications director, expresses confidence that this project will be finished by winter, without a doubt, before the Oscars take place.

Matthews speaks calmly, unruffled by the bustle of awards season or the star-studded guests at L’Ermitage. He maintains a consistent approach, stating, “I extend the same courtesy to every guest, and I find that artists appreciate not being singled out.
